Huevos Rancheros with Herdez for Día Del Niño


Ever since I was little: cooking, food, and family have always gone hand in hand. My fondest memories have been in the kitchen or around the dinner table. I remember asking my grandma why her food always tasted so good, and her answer was always the same, "I make it with love, mija!" So it's no surprise that I want to teach my daughter the same values I was brought up with. I know she's a little young, but whenever I'm in the kitchen, so is she! For Día Del Niño I wanted to make one of my all time favorite recipes, Huevos Rancheros

Each year on April 30th, Día del Niño, or Day of the Child, is a festive holiday celebrated across Mexico and in many Latin American countries to honor and appreciate children. It’s a time for communities to come together and hold special events for children and remember the joys of childhood.

It's also no surprise that my daughter loves to eat everything, and I do mean everything! (lol) So here's what you'll need:

Step 1: Dice your Cilantro, Onion, & Tomato 

Depending on your own personal preference, you can dice the ingredients into smaller pieces than mine!

Step 2: Pour a small amount of oil in a pan, heat on Low 


Once your oil is hot, start frying your corn tortilla! When both sides are golden, you're ready to put it on the plate! Then cook your egg however you see fit. I fried mine in the same oil, then placed it on the corn tortilla.

Step 3: Fry your diced ingredients until they're nice and soft


Step 4: Lay them over your Huevo (egg)  


Step 5: Add optional ingredients like, queso fresco, avocado, and sour cream 


Step 6: Pour your Herdez Salsa Casera sauce on the very top 


Step 7: Enjoy! 


**For babies under 1 year old, you'll want to make them scrambled eggs!**
