Date Night In Idea: Easy Spicy Chicken Empanadas

It's sad to say but Jeff & I don't really go on that many dates anymore! We do go to a lot of events, and when we do go out to eat we like bringing Camila with us. Our favorite thing to do is to stay in, sip on some award winning wine, like Sutter Home's Sangria, & try to make something we haven't in a while (or at all)! Jeff loves empanadas & I have never made them, so I decided to call up my grandma & get her recipe to test out for our date night in. Since family is at the heart of everything Sutter Homes does they're an easy choice for us, especially at such an affordable price. Another reason I decided to pair these spicy chicken empanadas with Sutter Home's Sangria was because they balance each other out. The spiciness of the empanadas plays & pairs beautifully with the sweetness of the Sangria. With the variety of flavors Sutter Home has it's easy to mix it up & use them for all my summer needs so things like out date night in feels that much more special.

Things You Need 

This for me was an all day process because I didn't feel like boiling & hand shredding the chicken. So I stuck it in the crock pot & let it sit & shred itself. So to make the chicken you need: 


-1 lb of chicken breast
- 1/2 onion (diced)
- 3 cloves of garlic (chopped)
- 1-2 serrano peppers (diced)
- 1tbsp of salt
- 1 tbsp of pepper 
- 1/2 tbsp of  Comino (Cumin)
- 1 cup of water
-Crockpot

To make:  

  1. Pour 1 cup of water into crock pot & set it on high
  2. Place all ingredients in crock pot 
  3. Cover & let it sit for 4 Hours
  4. Set the crock pot to warm & stir the chicken with a fork, it should shred as you stir to look like this: 

Things you'll need To make the empanadas

I thought it was going to take me forever to make the dough & roll it out but when my grandma told me she used pre-made pie crust I was like Hallelujah thank the Lord! It makes it wayyy easier & faster. So you'll need: 


- 1 box of pie crust
- 1 cup of flour
- rolling pin
- 2 1/2 in circle cookie cutter
- Egg whites from 2 eggs

The Process

1. Dust your counter with flour so the dough won't stick & tear
2. Roll out the dough & flatten the edges with rolling pin



    3. Take the cookie cutter & cut out as many circles as you want


4. Take a pinch of chicken and fill 1 circle of dough in the center, then fold it over



5. Seal the empanadas with a fork


6. Brush with egg whites on both sides


7. Bake at 350 degrees for 10-15 minutes or until they're golden brown


Serve with Sutter Home's Sangria wine & Enjoy!
